Characteristics : Mature and silky Rather rich and gourmet wine profile with notes of candied fruit, honey and spices. Prolonged aging on lees brings a notion of richness to this wine. Generous cuvée showing the evolution of a pretty Blanc de blancs born from Grand Cru. The mouth is enveloped thanks to the autolysis of the lees and the mineral and chalky frame is expressed in length. A small amount of sugar at disgorgement balances the substance of the wine and gives it solidity.
Food & wine pairing : Aperitif wine which will also accept fish with a light sauce or even scallops.
